A Brief History of Whisky in Fife
Fife's connection to whisky is older than almost anywhere else in Scotland. In 1494, the Exchequer Rolls recorded an order from King James IV instructing eight bolls of malt be given to Friar John Cor, a monk at Lindores Abbey near Newburgh, to make "aqua vitae", the water of life. It's the earliest known written reference to whisky production in Scotland, and it happened on ground that's a short drive from Hawkswood Country Estate.
- 1494: Friar John Cor is recorded producing aqua vitae at Lindores Abbey, the first written mention of Scotch whisky.
- 1824: Cameron Bridge distillery is founded near Leven, and grows into one of the largest grain distilleries in Europe, a reminder of Fife's role in the industrial side of whisky production too.
- 2005: Daftmill, a working farm near Cupar, begins distilling its own farm-grown barley, quietly becoming one of the most sought-after names among collectors.
- 2012 to 2015: Eden Mill and Kingsbarns open, followed by InchDairnie, marking the start of a modern craft distilling revival across the county.
- 2017: Lindores Abbey Distillery is built on the site of the original abbey, and spirit flows again after a gap of 523 years.
Distilleries and Tastings Worth Your Time

Lindores Abbey Distillery
Built on the site of the original abbey, this is the historic heart of Scotch whisky. Guided tours cover the site's history and current production, finishing with a tutored tasting that usually includes the distillery's MCDXCIV single malt, named for the year of that first written record. The distillery is dog friendly.
Kingsbarns Distillery
Housed in a converted 18th-century farm steading close to the golf links of the same name. Tours run around 90 minutes to two hours and end with a tutored tasting of five whiskies. There's a visitor centre and café serving locally sourced food.
Eden Mill
The closest distillery to St Andrews itself, on the banks of the Eden Estuary. Alongside whisky, Eden Mill produces gin, and offers cocktail masterclasses and tasting experiences, with a rooftop bar overlooking the estuary.
Daftmill
A working farm distillery producing whisky from its own barley on a very small scale. Daftmill doesn't offer public tours or a visitor centre, but its limited releases have a cult following, and it's worth knowing the name if you come across a bottle in a specialist bar.
Understanding What's in Your Glass
Tasting notes can feel like a language of their own. Here are the main terms you'll hear at a tutored tasting, and what they actually mean.
Peaty & smoky
Peat is burned during malting, and the smoke clings to the barley. On the west coast this often reads as medicinal or bonfire smoke; peat from further inland tends to give a softer, smoked-meat character. Peatiness and smokiness usually go together, though they're technically different things.
Floral
Delicate notes of heather, grass or blossom, common in lighter, Lowland-style whiskies such as those made in Fife.
Fruity
Ranges from orchard fruit and citrus to tropical or dried fruit, largely set during fermentation. Whiskies aged for longer in oak tend to show less of this, as the wood takes over.
Malty & cereal
A biscuity, breakfast-cereal note that's typical of younger whiskies or those matured mainly in ex-bourbon casks.
Sherried
Whisky matured in ex-sherry casks picks up dried fruit, nut and spice notes, along with a rounder, softer mouthfeel, rather than any actual sweetness from the sherry itself.
Maritime & coastal
A note of sea salt or brine, often found in whiskies matured close to the coast, which describes several of Fife's distilleries rather well.
Where to Eat and Drink Between Tastings
The Peat Inn
One of Scotland's most celebrated restaurants, a two-minute drive from Hawkswood. Michelin-starred since 2010, with menus built around Fife seafood and game. Book well ahead, particularly for evenings.
The East Neuk fishing villages
Anstruther, Pittenweem, St Monans and Crail are 20 to 30 minutes away, with harbours, seafood and a coastal path between them. The Anstruther Fish Bar and the Dreel Tavern in Anstruther are both well worth the stop.
St Andrews whisky bars
The Keys Bar on Market Street holds over 300 malts and has been recognised as one of Scotland's best bars. The Criterion, a family-run pub dating to 1874, carries close to 200 whiskies and runs a "Breakeven Bottle" scheme, offering a rare bottle by the dram at cost price. Both are around ten minutes from the estate.
